Ingredients:
– 1 lb. boneless skinless chicken breast
– 1 packet of Old El Paso fajita seasoning
– 2 lor 3 large peppers depending on preference
– 1 tbsp olive oil
– Mexican Cheese, Shredded
– Sour Cream (I use lite)
– Mexican Rice (optional)
– Black Beans (optional)
– Flour Tortillas (optional)
Instructions:
– chop peppers & cut chicken breasts into thin strips
– heat olive oil in large skillet (over medium heat)
– once hot, cook chicken in skillet until no longer pink
– add 1/3 cup of water + fajita seasoning mix + peppers
– Cook 6-10 minutes longer stirring occasionally (or until peppers
I decided to make Mexican rice (Knorr instant rice) to go with our chicken fajitas! Luke had 3 fajitas with flour tortillas and rice on the side. He topped with Mexican cheese and sour cream.
I had a chicken fajita bowl. I put the rice on the bottom and then the chicken/veggies on top. I topped with cheese and sour cream also.
