Mexican Style Breakfast Casserole

Mom made this Mexican breakfast casserole for a bridal shower we hosted recently and it was devoured. Almost everyone there asked for the recipe! Mom and I can’t take the credit because this is my Aunt Brenda’s recipe. We’ve always loved the traditional breakfast casserole, but this one with a Mexican twist is delicious! We served with fruit and some bagels from Panera Bread.

Ingredients:

12 beaten eggs

1 pt sour cream

1 lb grated jack cheese

1 lb grated sharp cheddar cheese

1 7 oz can diced chilies

1 7 oz can salsa

Greased 9 x 13 glass pan

– Mix all ingredients except salsa

– refrigerate overnight

– bake at 350 for one hour – just before done, add salsa & heat for 5 minutes
