Mom made this dip for us a few weeks ago and I cannot get ENOUGH of it! Our toddler also LOVES it! It’s a healthier dip option with corn, beans, peppers, etc. Highly recommend you try it!
INGREDIENTS
• 1 can black beans rinsed and drained
• 1 can black eyed peas rinsed and drained
• 1 can shoe peg corn or thawed frozen corn
• 1 can rotel drained of excess juice
• 1 red bell pepper diced
• 1 yellow bell pepper diced
• 1-2 tablespoons pickled jalapeños (optional)
• 8 oz Italian dressing
INSTRUCTIONS: Combine all ingredients in a mixing bowl. Stir in Italian dressing & refrigerate. Stir before serving to redistribute the dressing. We serve with Tostitos scoops.
