Mother’s Day Brunch Prep

Happy Saturday, friends!

I am so excited for Mother’s Day this year. This is the first Mother’s Day my husband and I have lived in our house together, so we’re hosting Mother’s Day brunch at our house tomorrow! I wish so badly my sweet mother-in-law could be here, but they’ll have a great time celebrating in Nashville. I know our siblings and my father-in-law will take good care of her!

I thrive off of having company!! I think it’s so fun getting everything clean and ready. I especially love lighting every candle in our house (which is A LOT). I got a ballon, flowers, wine, presents and BIG cards for my Mommy and Grams!!

Since we’re all going to church tomorrow, I wanted to make something that I could prepare ahead of time. I found a recipe for breakfast enchiladas. It was SO easy! Along with the main course, we’re going to have cinnamon rolls, fruit and mimosas!

Here’s the recipe:

Overnight Breakfast Enchiladas

What you’ll need:

1 lb sausage (browned)

2 cups shredded cheddar cheese

6 8 in flour tortillas

6 eggs

2 cups half-and-half

1 tablespoon all-purpose flour

1/2 teaspoon salt

3 oz package Real Bacon Bits

Instructions:

1. Spray 13×9 in pan with cooking spray

2. In a large bowl stir together browned sausage, 1 c. cheese and 1/2 of the package of bacon bits.

3. Place a 1/8 of the mixture down the center of a tortilla. Roll up and place seem side down in baking dish. Repeat until all tortillas are filled.

4. In another large bowl beat eggs, half and half, four and salt. Pour over the tortillas in the pan. You can cover the dish and place in the fridge overnight or baked immediately.

5. When ready to bake, preheat the oven to 350 degrees. Uncover dish and sprinkle remaining 1 cup of cheese over tortillas. Sprinkle the rest of the bacon bits over cheese. Cover baking dish and bake for 35 minutes. Uncover dish and bake 10 minutes longer or until set and cheese is melted.

All I have to do tomorrow when get home from church is put out the fruit, mimosa stuff and bake the breakfast enchiladas (I’ll need to add! Oh and make the cinnamon rolls.. how could I forget the best part?!
